Mama Michelle’s Stuffed Peppers

Mama Michelle is Nastassja’s mother (the name was coined at Chakra) and she LOVES to cook (and ofc distribute her food amongst our riders). Today we’re sharing a recipe that was an absolute hit during lockdown - Stuffed Peppers. Quick, easy, and delicious. Try it out!

Ingredients:

  1. 4 bell peppers

  2. 2 TBSP olive oil

  3. 2 TBSP chopped garlic

  4. 2 large chopped onions

  5. 1.2 kg mined chicken or tofu

  6. 2 chopped tomatoes

  7. 1 cup of tomato puree

  8. 2 TBSP Italian herb

  9. Salt & pepper to taste

  10. 1 TSP cumin powder

  11. 1/2 TSP chilii powder

  12. 1.5 cup basmati rice

Method:

  • Add olive oil to your frying pan 

  • Fry the garlic for 1 min

  • Add chopped onions & fry till golden

  • Add chopped tomatoes & fry for 3 min

  • Add tomato puree & cook for 2 min

  • Add Italian herb, salt & pepper, cumin powder & chilli powder

  • Add minced chicken or tofu & cook for 10 min

  • Add cooked rice & mix

  • Boil a pot of water & slice the top off the peppers & clean out the seeds

  • When boiling, add the peppers & tops - boil for 2 min & strain. Then let cool

  • Stuff your peppers & then wrap each separately & place in a baking dish

  • Preheat oven to 180 degrees C & bake for 40 min


Voila! Ready to serve!
